Our Story

Wild Harvest,
Since 1990

Cloudy Bay Clams was established in 1990 on the wild, nutrient-rich surf beaches of Marlborough, and it remains a wild surf clam harvest to this day.

Today the company is led by George Manettas and Tony Muollo, who bring close to 80 years of combined seafood-industry experience and a genuine passion for these clams. Their ambition: keep the wild harvest pristine, grow Cloudy Bay Clams, and put wild New Zealand surf clams in front of more of the world's best kitchens.

Tony Muollo

Principal · Wild Harvest & Operations

Tony Muollo has spent his working life in fishing and seafood, from the deck and the factory floor to running fleets and processing operations at scale.

He founded Transtasman Fisheries and Pyrmont Seafoods in Sydney, becoming the largest importer of fresh New Zealand seafood into the city. At Cloudy Bay Clams he oversees the wild harvest, the fleet and the boats themselves.

George Manettas has spent more than fifty years in seafood, from Sydney's markets to ventures across the region, and knows the trade from every side of the counter.

At Cloudy Bay Clams he leads the commercial side: opening markets, building relationships with chefs and distributors, and making a rare New Zealand harvest accessible across the Asia-Pacific and beyond.

Every clam passes through our purpose-built depuration facility — laid single-layer in tanks bathed in oxygen-enhanced deep-ocean seawater. The result: exceptionally clean, grit-free shellfish.
