Harvested from the low-tide zone at 2–4 metres, the Tuatua carries a smooth, low-profile shell in cream to light moss, with a 33% meat-to-shell ratio.

Raw: lightly oceanic with citrus undertones. Cooked: savoury characteristics, reminiscent of lightly smoked fish and Japanese soy.
