Who Is the Team Behind Cloudy Bay Clams?

The team behind Cloudy Bay Clams is led by two principals: George Manettas, who leads sales and markets, and Tony Muollo, who leads the wild harvest and operations. Between them they bring close to 80 years of combined seafood-industry experience to a wild surf clam harvest that has worked the Marlborough coast of New Zealand since 1990.

Cloudy Bay Clams was established in 1990 on the wild, nutrient-rich surf beaches of Marlborough, and it remains a wild surf clam harvest today. Three species come out of that harvest: the Storm Shell, the Tua Tua and the Diamond Shell.

George Manettas, Sales And Markets

George Manettas has spent more than fifty years in seafood, from Sydney’s markets to ventures across the region, and knows the trade from every side of the counter. At Cloudy Bay Clams he leads the commercial side: opening markets, building relationships with chefs and distributors, and making a rare New Zealand surf clam harvest accessible across the Asia-Pacific and beyond.

In his own words: “This brand has a legacy, and we’re focused on making it more accessible to chefs and markets across the region.”

Tony Muollo, Wild Harvest And Operations

Tony Muollo has spent his working life in fishing and seafood, from the deck and the factory floor to running fleets and processing operations at scale. He founded Transtasman Fisheries and Pyrmont Seafoods in Sydney, becoming the largest importer of fresh New Zealand seafood into the city. At Cloudy Bay Clams he oversees the wild harvest, the fleet and the boats themselves.

How The Two Came To Cloudy Bay Clams

The business began in 1990 as a commercial wild surf clam harvest on Marlborough’s surf beaches, and it carries that history with it. George Manettas and Tony Muollo now lead it as two lifelong seafood men with a shared passion for premium seafood and sustainability.

Their ambition is straightforward: keep the wild harvest pristine, grow Cloudy Bay Clams, and put wild New Zealand surf clams in front of more of the world’s best kitchens. That work reaches chefs, distributors and export partners across Australia, New Zealand, the UAE, the USA and Asia-Pacific.
