Stir Fried Tua Tua Clams

With Garlic & Ginger

Ingredients

  • 1 kg Cloudy Bay Clams Live Tua Tua Clams
  • 2 tbsp peanut oil
  • 5 cloves garlic, finely sliced
  • 2 tbsp fresh ginger, julienned
  • 3 spring onions, cut into 4 cm lengths
  • 1 small red chilli, finely sliced (optional)
  • 2 tbsp Shaoxing wine
  • 1 tbsp light soy sauce
  • 1 tsp oyster sauce
  • ½ tsp sugar
  • 1 tsp sesame oil
  • Fresh coriander, to garnish

Method

  1. Gently rinse the Tua Tua Clams under water.
  2. Heat a wok over high heat until smoking. Add the peanut oil.
  3. Add the garlic, ginger and chilli (if using), stirring constantly for 20–30 seconds until fragrant but not browned.
  4. Add the Tua Tua Clams and stir-fry, ensuring the aromatics coat the shells evenly.
  5. Pour in the Shaoxing wine around the edge of the wok, followed by the soy sauce, oyster sauce and sugar.
  6. Cover with a lid and steam for 30-40 seconds, shaking the wok occasionally, until the clams have opened and released their natural juices.
  7. Remove the lid and add the spring onions. Toss everything together over high heat until the sauce lightly coats the clams.
  8. Finish with the sesame oil and garnish with fresh coriander.
