Tua Tua Clams

With Smoked Paprika, Tomatoes And Basil

Ingredients

  • 1 kg Cloudy Bay Clams Frozen Tua Tua Clams
  • 1 red onion
  • 1 red chilli (thinly sliced)
  • 3 garlic cloves (finely sliced)
  • 1 tspn smoked paprika
  • 100 ml white wine
  • 70 ml olive oil
  • 15 cherry tomatoes (cut in 1/2)
  • Bunch of basil (torn)
  • 2 tbsp chives (finely chopped)
  • 1 lemon (zest + juice)

Method

  1. Thaw the bag of Frozen Tua Tua Clams in the refrigerator for 24 hours prior so that they may open easily.
  2. Place a heavy based pot with a tight fitting lid onto a medium heat.
  3. Add the olive oil, red onions, garlic, smoked paprika and chilli. Cook gently whilst stirring for 3 minutes.
  4. Add the white wine and bring to a boil.
  5. Add the clams and cover. Let simmer for 30-40 seconds or until opened then remove lid to check.
  6. Once all clams are open, add the cherry tomatoes, basil, chives, lemon juice and zest.
  7. Toss through the sauce. Taste and season if desired.
  8. Serve immediately with fresh bread to soak up the juices.
